About the workshop

Fungi are amazing, an important source of protein and food and medicinal source, critical for your health and the health of the planet. Nature’s decomposers and regenerators they are all important for your permaculture systems your soils and in becoming more self-reliant and sustainable. They can remove pollutants in water and soils, share nutrients between trees and regenerate landscape. A world of their own this species provides us with many secrets as to how they can help us and even save the world.

This two-day workshop will provide you with the knowledge, skills and confidence to cultivate and grow your own mushrooms.

During this workshop we will explore the cultivation methods of many different species of gourmet and medicinal mushrooms. It will include methods of growing the well-known Shiitake mushroom through to installing a King Stropharia Garden Giant mushroom patch will be covered in detail.

The focus will be on simple cultivation techniques with many hands-on activities to support the in-class theory.

You will discover how integration of edible and medicinal mushrooms into food forests, woodlots, and other permaculture systems is a rewarding way to bring mushrooms into your life. You will learn the theory of different types of mushroom species, the importance of growing mushrooms and how growing your own can improve your life. Also how to integrate mushroom rowing into your backyard or community garden food forests, woodlots and orchards; how to cultivate different species & methods of growing different species.

This will be a fun packed informative hands-on practical weekend totally consuming your hearts, minds and hands with mushrooms. You will get the ability, resources and confidence to go home and straight away, grow your own!

About the trainer

Will BorowskiWill Borowski

Will has gardened for over 30 years. He has a particular interest in ethnobotany and experience in mycology, permaculture, food forests and plant propagation. Will has been an Organic grower of gourmet mushrooms for over 10 years with an extensive culture library.

He was an environmental educator, horticulturalist, bush tucker guide and ranger at the Australian National Botanic Garden in Canberra for five years. Will is a strong believer and teacher of how the fungi kingdom is integrated into permaculture such as the patterns and ability to integrate into all of the zones.

He has taught gourmet mushroom cultivation at permaculture institutes and universities around Australia for over 10 years. He currently grows many mushrooms including: shiitake, pioppinos, king oyster mushrooms, morrels, reishi and various oyster mushrooms. He has taught many people from all around the world; from Papua New Guinea, Torres Strait Islands, New Zealand, Japan, South Africa, Uganda, India, China, America, Norway, Sweden, France, Chile, Italy…the list goes on…I suppose people from all around the world are interested in gourmet mushroom cultivation!

Will is regularly interviewed by Radio National and ABC radio south coast as Mycology expert and Australian authority on mushroom cultivation and safe wild mushroom hunting/picking. Recently Will was featured on River Cottage Australia on wild mushroom hunting and as an expert on gourmet mushroom cultivation, setting up the Tilba farm with gourmet mushrooms.

Will is also the owner and operator of Forest Fungi, teaching Aussies how to grow gourmet mushrooms and selling most of the supplies you need. He has an extensive mushroom culture library and comprehensive courses that communicates complex information for beginner mushroom growers…to get all enthusiasts on their way.

Workshop Program

You can either attend one day or join Will for two whole days to learn the basics of gourmet mushroom cultivation. The course has been specially developed for aspiring gourmet mushroom growers to learn how to grow mushrooms at home.

Day 1:
You will learn how to:

  • cultivate gourmet mushrooms,
  • make a still air box for mushroom cultivation
  • clone mushrooms onto agar
  • make grain spawn
  • make sawdust spawn
  • make dowel spawn

Participants receive petri dish cultures and grain spawn of King Oysters, Phoenix Oysters, Shiitake and Pioppino.

Day 2:
You will learn how to:

  • use grain spawn to grow Oyster mushrooms
  • grow King Oysters in a bucket
  • supplemented sawdust bags for species including: shiitake, pioppino, oysters and others
  • make dowels for shiitake logs and other gourmet mushroom log cultivation

You will take home an inoculated shiitake log, propagated oyster bag, comprehensive notes and various gourmet mushroom cultures worth hundreds of dollars. More importantly you will take home the know how to ensure you will be growing gourmet mushrooms in your own backyard.
